Chaap Masala – Spice Blend

This is a delicious blend of spices used to make Bengali Chicken Chaap. The poppy seeds and cashews create a thicker sauce unique to this dish.

Ingredients

  • 1 tsp cumin seeds
  • 6 raw cashew nuts
  • 20 cardamom pods
  • 1 tsp whole cloves
  • 1 cinnamon stick
  • 1 tsp dried ginger powder
  • 1 tsp garlic powder
  • 2 Indian bay leaves
  • 1 pinch of saffron (about 15-20 strands)
  • 1 tsp onion powder
  • 1 tsp ground nutmeg
  • 1 tsp red chilli powder
  • 1 tsp turmeric powder
  • 1 Tbsp white poppy seeds (posto).

Instructions

  1. Dry roast the whole spices (cumin, cardamom, cloves, cinnamon, bay leaves), cashew, and poppy seeds  in a pan on medium heat. Heat until spices become aromatic, but be careful not to burn.
  2. Put all ingredients in a spice blender and grind to a powder. Store in a air tight container and store in the refrigerator. Use within a few weeks.
