This is a delicious blend of spices used to make Bengali Chicken Chaap. The poppy seeds and cashews create a thicker sauce unique to this dish.

Ingredients
- 1 tsp cumin seeds
- 6 raw cashew nuts
- 20 cardamom pods
- 1 tsp whole cloves
- 1 cinnamon stick
- 1 tsp dried ginger powder
- 1 tsp garlic powder
- 2 Indian bay leaves
- 1 pinch of saffron (about 15-20 strands)
- 1 tsp onion powder
- 1 tsp ground nutmeg
- 1 tsp red chilli powder
- 1 tsp turmeric powder
- 1 Tbsp white poppy seeds (posto).
Instructions
- Dry roast the whole spices (cumin, cardamom, cloves, cinnamon, bay leaves), cashew, and poppy seeds in a pan on medium heat. Heat until spices become aromatic, but be careful not to burn.
- Put all ingredients in a spice blender and grind to a powder. Store in a air tight container and store in the refrigerator. Use within a few weeks.
